Roast Leg of Lamb with Orzo

Ingredients:
- 1 (5-6 Pound) leg of lamb
- 4 garlic cloves, slivered
- 1/4 cup fresh mint
- 2 table spoons crushed dried-leaf mint can be used instead
- 1 teaspoon crushed dried leaf oregano
- salt and pepper to taste
- 1 large onion, thinly sliced
- 1 cup water
- juice of 2 lemons (6 tablespoons)
- 4 cups chicken or beef broth
- 2 cups orzo
- 1/2 cup tomato sauce
- 1/2 cup grated kefalotiri
