Vanilla Carmels
less than a minute
INGREDIENTS:
- 1/3 cups butter
- 2 cups sugar
- 2 cups light cream (or heavy cream DO NOT use half and half)
- 1 cup corn syrup
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
DIRECTIONS:
- Line an 8" square baking pan with foil
- Lightly grease the foil with butter
- In a heavy saucepan combine sugar, 1 cup of cream, the corn syrup, and salt
- Cook over moderate heat stirring constantly for 10 minutes
- Warm remianing cream in the microwave for 1 minute
- Add it very slowly so it doesn’t stop boiling
- Cook stirring constantly for 5 minutes
- Stir in the butter 1 teaspoon at a time
- Continue cooking stirring constatntly until the candy reaches the firm ball stage (248 degrees on a candy thermometer)
- Pour the carmel into the prepared pan DO NOT SCRAPE THE SAUCEPAN
- When the carmel is cold and firm, lift the pan and remove the foil
- Using a sharp knife, mark the carmel into 1" squares then cut it
- Wrap in wax paper or plastic wrap
