"Old Fashioned" White Cake

INGREDIENTS:
- 2 1/2 cups sifted cake flour
- 1 2/3 cups sugar
- 1 teaspoon salt
- 2/3 cup crisco
- 3/4 cups milk
- 4 1/2 teaspoons double acting baking powder
- 5 egg whites (or 3 whole eggs)
- 1/2 cup milk
- 1 teaspoon vanilla
DIRECTIONS:
- In a mixing bowl add cake flour, sugar, salt, Crisco, and milk
- Blend thouroughly by hand or mixed (medium speed) for two minutes
- Stir in baking powder
- Add eggs whites (or eggs), milk, and vanilla
- Blend thouroughly by hand or mixed (medium speed) for two minutes
- Pour into two deep 9 inch layer pans (1 1/2 inches deep) which have been rubbed with crisco and lined with heavy waxed paper
- Bake in moderate heat oven (360 degrees) for 35 to 40 minutes
Bake at 385 degrees for about 20 minutes
If desired bake in cup cake pans.
Makes about 30 cupcakes
